The Dragon Pearl

My father spent his life in restaurant kitchens. He owned several Chinese restaurants over the years, but the one that stayed with me was the Dragon Pearl. On the exterior wall of the restaurant — the only exterior wall — he hand-carved scales into the entire surface, then painted a massive traditional Chinese dragon over them. Green body, red accents, fierce and proud. You could see it from the street. It was his signature, his art, his mark on the world.

He passed away from cancer when I was sixteen. I was too young to learn his recipes — too wrapped up in being a teenager to realize what I was losing. I don't have his handwritten recipe cards or his secret techniques. What I have are the memories of those flavors, and the image of him working the wok with an ease that made the impossible look effortless.

So I did what anyone does today — I went to YouTube, searched Google, bought cookbooks, and started testing recipes in my own kitchen. Trying to get back to those flavors one dish at a time. Dragon Pearl Kitchen is that journey — my way of going back to that wall, to that dragon, and carrying forward what he started.

The Health Mission

Losing my father to cancer changed how I think about food. Not in a preachy, eliminate-everything way — but in a practical, "where I can, let me make a better choice" way.

I'm not overhauling every recipe. But where it makes sense, I swap in healthier oils, reach for organic ingredients, cut back on sodium, and choose whole over refined. I call these Health Swaps — simple substitutions that make a traditional dish a little better for you without losing the flavor that makes it worth cooking in the first place.

But I don't stop at the stove. I use nutrition tracking apps like Cronometer and MyNetDiary to import my recipes and get real data — micronutrients, fats, sodium, fiber — the stuff you can't eyeball or get from an AI photo scan. I track biomarkers through regular blood testing to see how what I eat actually shows up in my body. And every recipe on this site is structured so you can import it directly into your own tracking app.

This isn't diet food. This is real food, made with a little more intention and a lot more data behind it.

Nothing Is Off the Table

Our family table was never just one thing. My father brought the wok and the fire — bold Chinese flavors from years in restaurant kitchens. My mother, French-Irish by heritage but American-raised, brought the oven. She was a baker at heart — cookies, cakes, breads, the kind of recipes where precision matters and the kitchen smells like home for hours.

My wife brought the bold flavors of South Indian cooking — fiery curries, coconut-rich stews, and spice blends that transform simple ingredients into something extraordinary. Thai cuisine crept in through years of travel and obsession with the balance of sweet, sour, salty, and spicy.

But honestly, there's not a cuisine we haven't embraced. Chinese, Indian, Thai, French, Japanese, Mexican — nothing is off limits. The dishes that excite me most are the ones where traditions collide. A Chinese technique with Indian spices. A Thai sauce on a dish my father would recognize. My mother's pastry instincts in a recipe my wife's family inspired. That's where Dragon Pearl Kitchen lives: at the intersection of everything we love.
